¾ kg Minced Mutton
2 Small Onions finely chopped
4 cloves garlic crushed
1 tsp cinnamon
8 tbs fresh parsley finely chopped
4 tbs butter
5 medium size long aubergines
Cut aubergines into slices crosswise and soak for 10 minutes in water to which lemon juice has been added Mix Meat, Onions, garlic, parsley and season with cinnamon, salt, and pepper.
Shape into round burger 5 cm in diameter. In a heavy skillet, melt butter and brown meat in medium heat on all sides.
In a lightly greases baking dish, arrange meat, onions, aubergines, tomatoes, courgettes, and potatoes alternately.
Add stock, salt and pepper. Bake in a preheated oven at 350F for about 45 minutes
